This 4-ingredient cake is a perfect sweet treat that is super easy to make any night of the week. The apples provide natural sweetness as well as a source of fiber, especially with the skin on. Top it with your favorite toppings like a few chocolate chips, peanut butter, or other fresh fruit like strawberries.

Ingredients
1 medium apple, cored, skin-on (Honeycrisp or Gala suggested)
1 egg
2 tablespoons sweetened cocoa powder
1 teaspoon baking powder
Utensils
Blender – ideally single serve blender
2-3-inch or 4-inch ramekins
Preparation
- Preheat the oven to 350 degrees Fahrenheit.
- Blend the apple, egg, cocoa powder, and baking soda together. You will need to take a spatula down the sides of the container to make sure it blends evenly. Blend for about 1 to 2 minutes.
- Carefully open the blender, there may be some pressure build up, and pour the cake mixture into 2 small ramekins. At this point, if you want to add some chocolate chips or peanut butter toppings sprinkle those on top now.
- Bake for 30 minutes.
- Carefully remove from the oven and cool down in the refrigerator for 5 minutes if prefer to enjoy immediately.
- Top with fresh fruit if you choose to and enjoy.
- This can be stored in the refrigerator for 2 to 3 days. Freezing is not recommended.
