Recipe: Apple Chocolate Cake

This 4-ingredient cake is a perfect sweet treat that is super easy to make any night of the week. The apples provide natural sweetness as well as a source of fiber, especially with the skin on. Top it with your favorite toppings like a few chocolate chips, peanut butter, or other fresh fruit like strawberries.

Ingredients

1 medium apple, cored, skin-on (Honeycrisp or Gala suggested)

1 egg

2 tablespoons sweetened cocoa powder

1 teaspoon baking powder

Utensils

Blender – ideally single serve blender

2-3-inch or 4-inch ramekins

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Blend the apple, egg, cocoa powder, and baking soda together. You will need to take a spatula down the sides of the container to make sure it blends evenly. Blend for about 1 to 2 minutes.
  3. Carefully open the blender, there may be some pressure build up, and pour the cake mixture into 2 small ramekins. At this point, if you want to add some chocolate chips or peanut butter toppings sprinkle those on top now.
  4. Bake for 30 minutes.
  5. Carefully remove from the oven and cool down in the refrigerator for 5 minutes if prefer to enjoy immediately.
  6. Top with fresh fruit if you choose to and enjoy.
  7. This can be stored in the refrigerator for 2 to 3 days. Freezing is not recommended.
