Ingredients
3 cups grated zucchini
2 cups whole wheat flour
1 cup brown sugar
½ cup granulated white sugar
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 eggs
½ cup olive or avocado oil
½ cup plain Greek yogurt
1 cup dark chocolate chips
Preparation
- Preheat the oven to 350 degrees Fahrenheit, with a rack in the center of the oven. Grease 2 -9×5-inch loaf pans with cooking spray.
- In a large bowl, whisk together the flour, sugars, cocoa powder, baking soda, salt, and cinnamon until well combined and there are no clumps. Set aside.
- In another mixing bowl, beat the eggs, oil, Greek yogurt, and vanilla extract together until well combined.
- Mix the grated zucchini into the wet ingredients and fold until just combined. Add the dry ingredients to the zucchini mixture in 3 additions, folding to combine after each addition. Then stir in the chocolate chips.
- Scrape the batter into the prepared pans and sprinkle chocolate chips on top.
- Bake until a toothpick/butter knife inserted in the center comes out clean (about 55 to 65 minutes). Place on a wire rack to cool for about 10 minutes, then remove the bread from the pan and cool completely.
- Once cool, cut each loaf into 8 slices and enjoy.
